The great Britannia bake off – Battenburgs

Another week, another bake for Britannia! Continuing with their bake off series the Britannia team took on the challenge of making their own Battenbergs this week. Let’s see how they got on.

Bake your own battenburg

What you’ll need

175g unsalted butter
175g caster sugar
150g self raising flour
3 eggs
2 tsp vanilla extract
1 tsp almond extract
50g ground almonds
2 tbsp milk
Pinch salt
Red food colouring
8 tbsp apricot jam
1 tbsp water
300g marzipan
Icing sugar for dusting
